| Job profile | Duties Performed/ Responsibilities: Day to day management of the fresh production outlet./live bakery, in coordination with the regional/HO buyer Handle both, front end- customers, and back end- production aspect of the fresh production. Mange the inventory levels & ensures top line and bottom line targets for the live bakery. Manage the ordering/ replenishment of the raw material/ finished good for the units- replenishment/ ordering. Ensure adherence to set recipes for production in outlets Help resolve team issues with the coordination of store manager/ Regional Buyer. Assist HO in rolling out new campaigns Assist HO in providing regional knowledge of products, concepts and information on market scenario. Helps optimize the operations of the units under his/ her supervision Create reports and send to the management for analysis as per set frequency. Take on other duties and responsibilities, as per the need of the business. Knowledge Hotel Management diploma/ Graduate / post Graduate with similar 'hands on' experience. Knowledge of Bakery, confectionary cuisines as a core skill, and/or international & regional Understanding of HACCP systems. Experience of at least 5 years, post qualification. Experience of at least one year in a Supervisory capacity. Skills Experience of entire production cycle, from raw material to finished product- Bakery & confectionary. Food Production knowledge with exposure to having handled vendors / suppliers. Handled Kitchen unit in a hotel or as a 'stand alone' facility. Should have been at the level of a 'Chef de Partie' or Commis I. Team Management, time management, communication, Microsoft tools. Basic math for recipe conversion & formulas. Abilities: Previous experience in Hotel/ Retailing, handling similar functional area Production Assistant: 20 Positions Duties Performed/ Responsibilities: Day to day Production of the goods as per assortment & production schedule. Ensure availability of all confectionary goods on the shelf, including Cakes, pastries, mousse, desserts & other goods. Ensure timely production to ensure inter related products is made in time. Take on responsibility of the section in absence of the Production Assistant 2/ Commis 2 of the section Adherence to set recipes for production in outlets Take on other duties and responsibilities, as per the need of the business. Knowledge Hotel Management diploma/ Graduate with similar 'hands on' experience. Knowledge of Bakery and or Confectionary, knowledge of both is a plus. Understanding of HACCP systems. Experience of at least 1 year, post qualification. Experience of at least one year in a Supervisory capacity. Skills Experience of entire production cycle, from raw material to finished product- confectionary Optional- Bakery Cake decoration, shape cakes, chocolate garnishes, basic sugar garnishes. Working with chilled desserts- mousse, soufflé, cheesecake, jellies etc. Food Production knowledge –Optional- exposure to having handled team members. Worked in bakery in a hotel/ retail or as a standalone facility. Should have been at the level of a 'trainee', apprentice or Commis 3. Time management, communication, Basic math for recipe conversion & formulas. Abilities: Previous experience in Hotel/ Retailing, handling similar functional area Added advantage- Exposure to Computers, Able to work in shifts Ability to perform under pressure. Experience: Fresher's or 1+ years after specific skill education (Diploma/ graduation/ Craft course) |
